Roasted Red Pepper Gazpacho


4 Roma tomatoes
1 yellow or arange bell pepper
1 seedless cucumber
1/2 cup red onion

Dice all of the above and set aside.

In Food Processor:
1 TBSP red wine or balsamic vinegar
2 TBSP Sugar
3 slices of bread
1 cup of tomato paste
3 cups water
4 roasted red peppers (1 1/2 Cups)

Mix the two groups in a bowl.  Add 1 TBSP of chopped cilantro. Salt and pepper to taste and chill before serving.
